
Wildly Popular Restaurant Expanding With 10 Minnesota Locations
I honestly had to reread this, as I can't believe there is a fast food chain that serves nothing but chicken salad, but there is, and business is so good that a Minnesota expansion is coming soon.
The nation's only fast-casual chicken salad restaurant, which has been recognized by several industry experts as one of the top franchises in America, has locations in 21 states with over 300 restaurants and is looking to add 10 new locations in Minnesota.

Southern Charm Meets the North Star State
Chicken Salad Chick, founded in Auburn, Alabama, in 2008, serves Southern-style chicken salad with more than a dozen original flavors, as well as fresh side salads, gourmet soups, sandwiches, and desserts.
In a press release announcing the expansion into Minnesota, the company says it plans to open 10 locations over the next five years, with locations targeted for the Minneapolis and St. Paul area.
A Family Affair with Minnesota Hoops Ties
The new locations will be owned and operated by a family with deep basketball ties to Minnesota and the NBA. The Coffey family – Richard and Sheba, and their children Sydney, Nia, and Amir all have impressive basketball resumes, having played collegiately and professionally.
Richard and Amir both played at the University of Minnesota, with Richard suiting up for the Minnesota Timberwolves and Amir currently playing in the NBA for the Los Angeles Clippers. Nia is in her fifth season with the Atlanta Dream in the WNBA.
